Highly pure, neutral yeast lactase (beta-galactosidase) produced by controlled fermentation of the yeast Kluyveromyces lactis. opti-lactase LX2 is used for hydrolyses of milk sugar (lactose) in milk and whey products. The activity is constituted by a pH from 6 to 8. The effective temperature is at 45 °C. However, excellent results are still obtained in cold ranges of down to about 5 °C. Application:For complete decomposition of the lactose we recommend:0.6 – 0.85 g/litre of milk at 8 – 12 °C in 24 hours. If hydrolyses are supposed to be run at warmer temperatures, the dosage of enzymes and reaction time can be decreased. In a simple laboratory test the effective dosage can be analysed.Storage/ Shelf life:12 months when stored at + 2 °C to + 8 °C without loss of activity.
